  • 1 lb boneless, skinless chicken breasts
  • 12 oz bowtie pasta
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup chicken broth (low sodium)
  • 1 cup Velveeta cheese (cubed)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley or chives (for garnish)
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Cook the bowtie pasta in salted boiling water until al dente, about 10-11 minutes. Drain and set aside.
  2. Toss the chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a skillet, heat olive oil and 2 tbsp of butter over medium-high heat. Sear the seasoned chicken until golden brown and cooked through, adding minced garlic in the last minute.
  4. Melt the remaining butter in the same skillet over medium heat; add more garlic and cook until fragrant.
  5. Stir in heavy cream and chicken broth; bring to a gentle simmer before adding cream cheese until smooth.
  6. Add Velveeta, mozzarella, and Parmesan cheeses; stir until melted and thickened.
  7. Combine cooked pasta with sauce, adjusting consistency with reserved pasta water if needed.
  8. Serve on plates with garlic chicken bites on top; garnish with fresh herbs as desired.
