  • 1 can (14.5 oz) Diced Tomatoes, undrained

Instructions

  1. Prepare your ingredients by finely chopping the onions, carrots, and celery, and mincing the garlic. If using canned cannellini beans, rinse and drain them.
  2. In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, celery, and garlic; sauté for 5–7 minutes until softened.
  3. Stir in diced tomatoes (with their juice) and pour in the broth; bring to a gentle simmer.
