  • 1 cup butter (softened (2 sticks))
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 cups flour (spooned and leveled)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old fashioned oats
  • 1 cup corn flakes
  • 1 cup pecans (roughly chopped and toasted)
  • 1/2 cup coconut flakes
  • 1 cup peanut butter chips
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Toast chopped pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Let cool.
  2. In a large bowl or stand mixer, beat softened butter until fluffy. Add white and brown sugars; mix well.
  3. Incorporate eggs one at a time and mix in vanilla extract.
  4. Blend flour with salt, baking powder, and baking soda before folding into the wet mixture.
  5. Gently add oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips until just combined.
  6. Chill dough in the fridge for at least 1 hour.
  7. Preheat oven to 350°F and line baking sheets with parchment paper.
  8. Scoop 1/4 cup portions of dough onto baking sheets with space in between.
  9. Bake for 12–14 minutes until golden at edges but shiny in the center.
  10. Allow cooling on sheets before serving.
