  • 2 (28 oz) cans San Marzano peeled tomatoes (do not drain)

  • 1/4 cup heavy cream (or plant-based alternative)
  • 8 large fresh basil leaves (roughly chopped)
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • Kosher salt and freshly ground black pepper (to taste)
  • Croutons (optional garnish)

Instructions

  1. In a heavy-bottomed pot, heat olive oil over medium-high heat. Sauté minced garlic for 30 seconds until fragrant, then add sliced onion and cook for about 8 minutes until translucent.
  2. Stir in canned San Marzano tomatoes (with juice), chicken stock, and sugar. Bring to a simmer and cook uncovered for approximately 12 minutes.
  3. Mix in heavy cream, chopped basil, oregano, red pepper flakes, salt, and pepper. Stir well to combine all flavors.
  4. Blend the soup until smooth using an immersion blender or a regular blender (in batches).
  5. Serve hot with optional parmesan cheese and croutons.
