  • 1 cup Ditalini pasta
  • 2 tbsp olive oil
  • 1 lb ground turkey or chicken sausage (casings removed)
  • 5 cloves garlic (minced)
  • 1 onion (diced)
  • 1 cup carrots (chopped)
  • 3 stalks celery (diced)
  • 3 cups chicken broth
  • 16 oz tomato sauce
  • 15 oz diced tomatoes
  • 1 cup water
  • 15 oz red kidney beans (rinsed/drained)
  • 15 oz Great Northern beans (drained/rinsed)
  • Seasonings: dried basil, salt, pepper, Italian seasoning

Instructions

  1. Cook the Ditalini pasta according to package directions until al dente. Drain and set aside.
  2. In a large pot, heat 1 tablespoon olive oil over medium heat. Add the ground turkey or chicken sausage and cook until browned; remove from pot and set aside.
  3. In the same pot, add another tablespoon of olive oil and sauté garlic, onion, carrots, and celery for about 3-4 minutes until tender.
  4. Pour in chicken broth, tomato sauce, diced tomatoes, basil, salt, pepper, Italian seasoning, cooked sausage, and water. Stir well.
  5. Bring to a boil then reduce heat to low; let simmer for about 15 minutes to meld flavors.
  6. Stir in both types of beans and cooked Ditalini pasta; mix well until heated through.
  7. Serve hot and enjoy!
