  2. Add cold cubed butter and blend until crumbly.
  3. Mix in cold water and vanilla extract to form a dough.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Roll out the dough into a rectangle on a floured surface.
  6. Fold the dough into thirds to create layers; roll out again.
  7. Repeat folding and rolling two more times.
  8. Preheat oven to 375°F (190°C).
  9. Cut the dough into triangles; place chocolate chips at the base.
  10. Roll each triangle from base to tip to form croissants.
  11. Bake on a parchment-lined baking sheet for about 25 minutes until golden brown.
