  • 12 oz evaporated milk
  • ½ cup creamy cookie butter, microwaved for 2030 seconds until warm
  • 1½ cups heavy whipping cream
  • 2 Tbsp confectioners’ sugar
  • ½ tsp ground cinnamon
  • â…“ cup crushed Biscoff cookies, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish.
  2. In a large bowl, whisk together cake flour, ground Biscoff cookies, cinnamon, baking powder, and salt.
  3. In a stand mixer, beat sugar and egg yolks until light; add vanilla and cream.
  4. Fold dry ingredients into wet mixture; gently incorporate whipped egg whites until combined.
  5. Pour batter into the baking dish and bake for 15-20 minutes.
  6. Mix together heavy cream, sweetened condensed milk, evaporated milk, and warmed cookie butter.
  7. Poke holes in the baked cake and pour the milk mixture over it; allow it to cool at room temperature before refrigerating overnight.
