  • 2 cups shredded cooked chicken (rotisserie or leftover turkey)
  • 1 can cream of chicken soup (low-sodium or homemade)
  • 1 can French onion soup
  • 1 cup sour cream (or dairy-free yogurt)
  • 1 cup shredded cheese (mozzarella or Swiss)
  • 1 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste black pepper
  • 1/4 cup chopped parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Layer half of the mixture in a greased 9×13 inch baking dish and sprinkle half of the French fried onions on top. Add the remaining mixture and top with the rest of the onions.
