  • ¾ cup water
  • 3 ½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 teaspoon instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 tsp instant coffee granules
  • 1 large egg (room temperature)
  • ½ tsp vanilla extract
  • Tangzhong (from recipe above)
  • 4 tablespoon unsalted butter (room temperature)
  • 5 tbsp unsalted butter (room temperature)
  • 2/3 cup dark brown sugar (or light brown sugar)
  • 2 tsp ground cinnamon
  • 1 ½ tsp instant coffee granules
  • 2 oz cream cheese (softened)
  • 4 tbsp unsalted butter (softened)
  • 1 cup powdered sugar
  • 4 tbsp heavy cream
  • ¾ tsp instant coffee granules

Instructions

  1. Prepare the tangzhong by whisking together water and flour in a saucepan over medium heat until it thickens into a paste. Set aside.
  2. In a mixing bowl, combine all-purpose flour, sugar, yeast, and salt.
  3. Warm the milk slightly and dissolve instant coffee in it. Add to dry ingredients along with egg, vanilla extract, and tangzhong.
  4. Knead the mixture until a shaggy dough forms, then gradually add softened butter until incorporated.
  5. Continue kneading until you achieve smooth elastic dough.
  6. Let rise until doubled in size (about 45-60 minutes).
  7. Prepare filling by mixing butter, brown sugar, cinnamon, and instant coffee.
  8. Roll out the dough into a rectangle, spread filling evenly, and cut into strips before rolling up each strip.
  9. Place rolls in a baking pan and let rise again before baking at 325°F for 20-23 minutes or until golden brown.
  10. Make frosting by combining softened cream cheese and butter with powdered sugar, heavy cream, and instant coffee.
  11. Frost cooled rolls before serving.
