  • 1/2 cup heavy cream
  • 2 tablespoons instant espresso powder
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon instant espresso powder
  • Chocolate shavings
  • Cocoa powder dusting

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a springform pan by greasing it and lining the bottom with parchment paper.
  2. Combine crushed cookies and melted butter; press firmly into the bottom of the pan. Bake for 10 minutes and let cool.
  3. In a mixing bowl, beat cream cheese, sugar, and cornstarch until smooth. Add eggs one at a time, mixing gently.
  4. In another bowl, whisk together sour cream, heavy cream, espresso powder, and vanilla; fold into the cream cheese mixture.

  7. Prepare whipped cream by beating heavy cream with powdered sugar and espresso powder until stiff peaks form; spread over chilled cheesecake before serving.
