  • 500g shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 red chili, sliced
  • 1 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp paprika
  • 400ml coconut milk
  • 1 tbsp tomato paste
  • Salt & pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice in salted water until fluffy.
  2. In a large pan, heat olive oil over medium heat. Sauté onions until soft.
  3. Add garlic, ginger, and red chili; cook for another 2-3 minutes.
  4. Stir in curry powder, turmeric, and paprika; combine well.
  5. Mix in tomato paste and pour in coconut milk; simmer for about 5 minutes.
  6. Add shrimp and season with salt and pepper; cook until shrimp is pink (about 4-5 minutes).
  7. Serve over rice and garnish with cilantro.
