  • 2 Tbsp coconut oil (or vegetable oil)
  • 1 large onion, finely sliced
  • 4 garlic cloves, minced
  • 1 Tbsp fresh ginger, grated
  • 2 Tbsp red curry paste (or curry powder)
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1 tsp chili flakes (optional, for heat)
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth (or stock)
  • 1 Tbsp tomato paste
  • 2 Tbsp brown sugar or honey

Instructions

  1. Prepare your ingredients by cutting the beef into large chunks, slicing the onion, mincing the garlic, and grating the ginger.
  2. In a large pot over medium heat, melt coconut oil and sauté onions until softened. Add garlic and ginger until fragrant.
  3. Stir in red curry paste, ground cumin, turmeric, cinnamon, and chili flakes for one minute.
  4. Add beef chunks to coat in spices and brown slightly on all sides (about 5–7 minutes).
  5. Pour in coconut milk and beef broth; add tomato paste and brown sugar/honey, stirring to combine.
  6. Bring to a boil then reduce heat to low and simmer covered for 2–3 hours until beef is tender.
  7. Adjust seasoning if necessary before serving hot over jasmine rice or with naan.
