  • 2 lbs beef chuck, cut into 2-inch cubes
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • Juice of 1 lime

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Sear the beef cubes until browned on all sides; remove and set aside.
  2. In the same pot, sauté onions, garlic, and ginger until fragrant. Stir in red curry paste and cook for another minute.
  3. Return beef to the pot, add coconut milk and beef broth, then stir in lime juice. Mix well.
  4. Reduce heat to low and simmer covered for 2-3 hours until the beef is tender.
