Ingredients

Scale
  • 1 lb beef stew meat, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced (plus 2 extra for garlic naan)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp chili flakes (optional)
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 (13.5 oz) can coconut milk
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 cup plain yogurt, room temperature

Instructions

  1. Begin by heating the vegetable oil in a large pot over medium heat. Add the finely chopped onion and sauté until translucent. Stir in the minced garlic (reserve 2 cloves for later) and grated ginger, cooking until fragrant.
  2. Add the beef stew meat to the pot. Cook until browned on all sides, seasoning with salt, pepper, curry powder, ground cumin, and optional chili flakes. Mix well to coat the meat with spices.
  3. Stir in the tomato paste followed by chickpeas, coconut milk, and beef broth. Bring to a gentle simmer. Reduce heat to low, cover, and let it cook slowly for about 1 hour or until the beef is tender.
  4. In a mixing bowl, combine flour, salt, baking powder, and yogurt. Mix until a dough forms. Knead on a floured surface until smooth. Let it rest while you finish cooking the curry.
  5. Divide dough into small balls. Roll each ball into flat circles using a rolling pin. Heat a skillet over medium-high heat; cook each naan until bubbles form on top before flipping to cook both sides until golden brown. Brush with melted butter mixed with reserved minced garlic.
  6. Once your coconut beef & chickpea curry has thickened and flavors have melded together beautifully, serve hot garnished with fresh cilantro alongside your warm homemade garlic naan.
