  • 1 pound ground turkey
  • 1 medium yellow onion (diced)
  • 4 medium carrots (finely diced)
  • 4 medium celery ribs (finely diced)
  • 5 teaspoons minced garlic (about 5 cloves)
  • 4 cups beef broth
  • 2 (15 ounce cans) diced tomatoes (drained)
  • 1 (15 ounce can) red kidney beans (drained and rinsed)
  • 1 (15 ounce can) cannellini beans (drained and rinsed)
  • 1 1/2 cups ditalini pasta
  • 1/4 cup chopped fresh basil (optional)
  • 1/2 cup grated Parmesan cheese (optional)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/2 teaspoon dried thyme

Instructions

  1. In a large pot over medium-high heat, brown 1 pound of ground turkey until cooked through. Drain excess fat.
  2. Add 1 diced onion, 4 finely diced carrots, and 4 finely diced celery ribs to the pot. Sauté until softened, about 7-10 minutes. Stir in 5 teaspoons of minced garlic during the last minute.
  3. Pour in 4 cups of beef broth and add 2 cans of diced tomatoes (drained). Rinse and add 1 can each of red kidney beans and cannellini beans. Season with salt, black pepper, and dried thyme.
  4. Bring to a boil, then reduce heat to medium-low and stir in 1½ cups of ditalini pasta. Simmer until pasta is al dente, roughly 7 minutes.
  5. Serve hot, garnished with fresh basil and grated Parmesan if desired.
