  • 10g salt
  • 50g caster sugar
  • 10g instant yeast
  • 250ml cool water
  • 250g chilled unsalted butter (high-quality recommended)
  • 1 medium egg (beaten for glazing)

Instructions

  1. In a stand mixer with a dough hook, mix flour, salt, sugar, and yeast. Add cool water and knead until you have a stiff dough.
  2. Shape the dough into a ball, wrap in plastic, and refrigerate for 1 hour.
  3. Roll out the chilled dough into a rectangle on a floured surface.
  4. Flatten the chilled butter into a rectangle and place it over two-thirds of the dough; fold to encase the butter.
  5. Chill again for an hour, then roll out and fold like a letter three times, chilling between each turn.
  6. Refrigerate overnight to rest.
  7. Roll out into triangles, shape into croissants, and proof at room temperature until doubled in size.
  8. Preheat the oven to 200°C (392°F). Brush with beaten egg and bake for 15–20 minutes until golden.
