  • 5 strips turkey bacon
  • 3 1/2 lbs beef chuck
  • 1 yellow onion
  • 3 large carrots
  • 5 garlic cloves
  • 10 oz frozen pearl onions
  • 16 oz cremini mushrooms
  • 4 tablespoons unsalted butter
  • 2 cups Burgundy apple vinegar
  • 2 cups beef stock
  • Fresh thyme
  • Bay leaves

Instructions

  1. Preheat your oven to 350°F.
  2. Sauté turkey bacon in a Dutch oven over medium-low heat until browned. Remove and set aside.
  3. Season beef with salt and pepper, then sear in the Dutch oven until browned on all sides. Remove and set aside.
  4. In the same pot, add butter, chopped onions, carrots, and garlic; sauté until softened. Stir in tomato paste and flour.
  5. Pour in apple vinegar while scraping up browned bits; add beef stock, return bacon and beef to pot along with herbs, cover, and bake for 2.5 hours.
  6. While baking, sauté mushrooms and pearl onions until browned; season with salt and pepper.
  7. After initial baking time, stir in mushrooms and onions; bake an additional 45-60 minutes until beef is tender.
