Ingredients

Scale
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm water
  • 1 tablespoon granulated sugar
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup baking soda
  • 1 large egg, beaten
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Activate the yeast by mixing warm water with yeast and sugar. Let sit until foamy (5-10 minutes).
  2. In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and melted butter; stir until dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise until doubled (1-1.5 hours).
  4. Punch down the dough and divide into 8 portions. Roll each portion into a rope and shape into pretzels.
  5. Preheat oven to 375°F (190°C). Boil water with baking soda; drop pretzels in one at a time for about 30 seconds, then remove with a slotted spoon.
  6. Brush each pretzel with beaten egg and sprinkle generously with cinnamon-sugar mixture.
  7. Bake for 12-15 minutes until golden brown.
