  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup melted butter
  • ½ cup unsalted butter (softened)
  • ½ cup brown sugar
  • 1 tbsp ground cinnamon
  • 24 oz cream cheese (softened)
  • 1 cup sugar
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 cup sour cream
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 4 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp milk (optional, to thin if needed)

Instructions

  1. Preheat oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan and bake for 10 minutes. Allow to cool.
  2. Mix softened butter, brown sugar, and ground cinnamon in another bowl. Spread evenly over the cooled crust.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time; mix in vanilla extract and sour cream. Finally, stir in brown sugar and cinnamon.
  4. Pour the cheesecake mixture over the cinnamon layer and bake for about 55 minutes or until set but slightly jiggly in the center. Cool gradually in the oven.
  5. For frosting, beat softened cream cheese with unsalted butter and powdered sugar; add vanilla extract and thin with milk if necessary.
  6. Frost cooled cheesecake before slicing to serve.
