  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 ounces chocolate almond bark
  • 1 ½ cups white chocolate chips
  • ½ can sweetened condensed milk (7 oz)
  • ½ teaspoon mint extract
  • Green food coloring

Instructions

  1. In a large mixing bowl, cream together the room-temperature butter and sugar until light and fluffy. Mix in eggs one at a time, followed by the vanilla extract.
  2. Combine dry ingredients—cocoa powder, salt, baking soda, baking powder, and flour—into the mixture until just combined.
  3. Roll the dough into 1-inch balls and place them on lined or greased baking sheets. Use your thumb to create a well in each ball.
  4. Bake at 350°F for about 12 minutes. If necessary, gently press down on the centers again after removing from the oven. Cool on a wire rack.
  5. For the mint fudge center, melt white chocolate chips and sweetened condensed milk in a saucepan over medium heat until smooth. Stir in mint extract and green food coloring.
  6. Spoon the fudge mixture into each cookie's center and drizzle with melted chocolate almond bark.
