  • 1 cup mashed bananas (about 2 medium bananas)
  • 2 teaspoons vanilla extract
  • ¾ cup mini chocolate chips

  1. Preheat the oven to 350°F (177°C) and line an 8×8 inch baking pan with parchment paper.
  2. Melt the unsalted butter in a microwave-safe bowl until fully melted; allow it to cool slightly.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Combine melted butter and brown sugar in a large mixing bowl until smooth. Add egg, mashed bananas, and vanilla extract; mix well.
  5. Gradually stir in the dry ingredients until just combined. Fold in mini chocolate chips.
  6. Pour the batter into the prepared pan; smooth the top and add extra chocolate chips if desired.
  7. Bake for 30-35 minutes or until firm around the edges; a toothpick should come out clean or with a few crumbs.
