  • 2 medium sweet potatoes, peeled and cubed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp chipotle chili powder
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp lime juice
  • ½ cup plant-based yogurt
  • ½ cup fresh cilantro leaves
  • 1 small garlic clove
  • Salt to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Marinate chicken by mixing olive oil, chipotle chili powder, garlic powder, cumin, salt, and pepper in a bowl. Coat chicken and let it sit for 15–30 minutes.
  2. Preheat oven to 425°F (220°C). Toss sweet potato cubes with olive oil, garlic powder, cumin, salt, and pepper. Roast on a baking sheet for 25–30 minutes.
  3. Sear marinated chicken in a skillet over medium-high heat for about 5–6 minutes per side until cooked through. Let rest before slicing.
  4. Blend plant-based yogurt, cilantro leaves, lime juice, garlic clove, olive oil, and salt until smooth for the sauce.
  5. Heat black beans with cumin and lime juice in a saucepan over medium heat for 5–7 minutes.
