  • 3 lb chicken thighs (boneless & skinless)
  • 3/4 cup plain yogurt
  • 5 cloves garlic (minced)
  • 1 tablespoon white vinegar
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 2 teaspoons cardamom powder
  • 1 tablespoon chili powder
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil
  • 2 teaspoons sea salt
  • 2 teaspoons black pepper

Instructions

  1. Prepare the chicken by placing the thighs on a cutting board and covering them with plastic wrap. Optionally, tenderize using a meat tenderizer.
  2. In a large mixing bowl or zip bag, combine chicken thighs with yogurt, minced garlic, vinegar, spices, lemon juice, olive oil, salt, and pepper. Mix well to ensure even coating.
  3. Cover or seal and refrigerate for at least 3 hours; overnight is best.
  4. Preheat grill or grill pan over medium-high heat and grill marinated chicken for about 8-10 minutes on each side until fully cooked through.
  5. Remove from heat and let rest before slicing.
