  • 2 tbsp olive oil
  • 1 1/2 lb chicken breast
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 oz gluten free farfalle pasta
  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil water in a large pot. Add gluten-free farfalle pasta according to package instructions until al dente. Drain and set aside.
  2. In a mixing bowl, combine paprika, oregano, garlic powder, thyme, salt, and black pepper.
  3. Pound the chicken breasts slightly to thin them out. Rub the seasoning mixture on both sides of each chicken breast.
  4. Heat olive oil in a large skillet over medium heat. Sear the seasoned chicken for about 5 minutes on each side. After both sides are browned, lower the heat to medium-low, cover with a lid, and cook an additional 10-12 minutes until the internal temperature reaches 165°F. Remove from skillet and place on a cutting board.
  5. Add butter to the same skillet where you cooked the chicken. Once melted, stir in dry shallots, garlic powder, and Italian seasoning; simmer for one minute.
  6. Add Gluten Free Flour to the skillet and stir well while scraping any bits off the bottom. Pour in chicken broth followed by heavy cream. Whisk until smooth.
  7. Stir in shredded Parmesan cheese until melted into a creamy sauce. Adjust thickness by adding reserved pasta water slowly as needed.
  8. Toss cooked pasta into the sauce until evenly coated. Slice cooked chicken breasts and add them on top of pasta before serving.
