  • 3 bell peppers (seeded and thinly sliced)
  • 1 medium yellow onion (thinly sliced)
  • 1 ¼ lb boneless chicken breasts (sliced into thin strips)
  • 2 Tablespoons olive oil (divided)
  • Juice from one lime (about 2 Tablespoons)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground pepper
  • 8 flour or corn tortillas

Instructions

  1. Combine all seasoning ingredients in a small bowl and set aside.
  2. Heat 1 tablespoon of olive oil in a cast iron skillet over medium heat. Add the bell peppers and onion; sauté for about 5-7 minutes until they begin to soften.
  3. Stir in minced garlic and half of the seasoning mix; sauté for an additional 2-3 minutes. Add water if needed to prevent burning.
  4. Transfer the veggies to a bowl. In the same skillet, add remaining oil and chicken strips. Sprinkle with the rest of the seasoning and lime juice. Cook for about 5-6 minutes until fully cooked.
  5. Return the sautéed veggies to the skillet and stir everything together for another minute or two.
  6. Serve in warm tortillas with your choice of toppings.
