  • 1 (32 oz) quart chicken stock
  • 4 cups shredded cooked chicken (or 1.5 lbs raw skinless chicken)
  • 2 cups all-purpose flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
  • 3/4 cup (6 oz) whole milk
  • 4 tablespoons butter (melted)

Instructions

  1. In a heavy-bottomed pot, melt butter over medium-high heat. Add onion, carrots, and celery; cook for 5 minutes until softened. Stir in garlic and cook for an additional minute.
  2. Add flour to create a roux; cook for 1 minute while stirring constantly. Gradually stir in evaporated milk and chicken stock until lump-free.
  3. If using raw chicken, add an extra cup of broth and simmer for about 20 minutes until cooked through before shredding. For pre-cooked chicken, bring soup to a boil, then add shredded chicken along with thyme and seasoning.
  4. In a separate bowl, mix dumpling ingredients until just combined. Drop spoonfuls onto simmering soup; cover tightly and cook for about 15 minutes without lifting the lid.
