  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the russet potatoes clean, dry them, then pierce each several times with a fork.
  3. Rub the potatoes with olive oil and sprinkle salt and pepper on top.
  4. Place them on a baking sheet and bake for about 45 minutes until tender.
  5. While baking, cook the ground beef in a skillet over medium heat until browned; drain excess fat.
  6. Stir in taco seasoning as per packet instructions and simmer for about 5 minutes.
  7. Once potatoes are baked, let cool slightly. Cut a slit on top, open them up gently, fill with the seasoned beef, and top with cheddar cheese.
  8. Return to the oven for an additional 5 minutes until cheese is melted.
  9. Remove from oven and garnish with sour cream, green onions, tomatoes, olives, and cilantro.
