  • 1 (15 ounce) can tomato sauce

  • 4 cups beef broth
  • 1 (20 ounce) package frozen Italian mini meatballs, thawed
  • 20 ounces fresh refrigerated cheese tortellini pasta
  • ½ cup shredded Parmesan cheese, plus additional for garnish
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • Chopped fresh basil or parsley, for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Sauté the diced onion until softened, about 2-3 minutes. Add minced garlic and cook for an additional minute.
  2. Stir in the canned tomatoes (undrained), tomato sauce, Italian seasoning, beef broth, and thawed meatballs. Bring to a boil; then reduce heat and simmer uncovered for 20 minutes.
  3. Add the cheese tortellini and cook until tender, approximately 5-7 minutes. Stir in shredded Parmesan cheese during the last minute of cooking.
