  • 2 slices chicken bacon
  • 3 shallots
  • 1 carrot
  • 2 small stalks celery
  • 3 cloves garlic
  • 400g extra lean beef mince
  • ½ tablespoon dried mixed herbs
  • 400g chopped tomatoes (canned)
  • 3 tablespoons tomato paste
  • 240ml chicken or beef stock
  • 500g gnocchi
  • 120g mature cheddar cheese

Instructions

  1. Spray a frying pan with olive oil and cook chicken bacon until golden. Remove and set aside.
  2. Sauté diced shallots, carrot, and celery in the same pan until softened.
  3. Add garlic and ground beef; cook until browned.
  4. Stir in cooked bacon, mixed herbs, chopped tomatoes, tomato paste, sweetener (if using), stock, and balsamic vinegar. Simmer for 20 minutes.
  5. Incorporate gnocchi into the sauce and simmer for an additional 5–8 minutes.
  6. Season with salt and pepper to taste.
  7. Transfer to a baking dish, sprinkle grated cheddar on top, and broil until golden brown.
  8. Serve garnished with fresh basil.
