  • 1/4 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground cardamom
  • 1/8 tsp ground cloves
  • 1 1/2 tsp salt
  • 2 tbsp (25 g) granulated white sugar
  • 2 eggs, whisked
  • 1 tbsp vanilla extract
  • 1/2 cup (112 g) unsalted butter, very softened
  • 1 cup (220 g) light brown sugar, packed
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 3/4 tsp ground cardamom
  • 1/8 tsp ground cloves
  • 1/3 cup (116 g) honey
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 6 tbsp (84 g) unsalted butter, very softened
  • 6 oz (170 g) cream cheese, softened
  • 3/4 cup (97 g) powdered sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground allspice
  • 1/8 tsp ground nutmeg
  • 1/4 tsp ground cardamom
  • Pinch of cloves

Instructions

  1. Warm the milk to about 110°F and combine it with yeast and sugar. Let sit until frothy.
  2. In a mixing bowl, blend flour, spices, salt, eggs, vanilla extract, and softened butter. Add the yeast mixture when ready.
  3. Knead the dough until smooth (5-7 minutes) and let it rise until doubled in size (60-90 minutes).
  4. Prepare the filling by mixing brown sugar, spices, honey, vanilla extract, and salt.
  5. Roll out the dough into a rectangle, spread softened butter, then evenly layer the filling.
  6. Roll tightly into a log and slice into equal pieces.
  7. Place in a greased baking pan to rise again (about 1 hour).
  8. Preheat oven to 350°F and bake for 30 minutes or until golden brown.
  9. While cooling slightly, prepare frosting ingredients and spread generously over warm rolls.
