  • 1 bunch celery
  • 4 Persian cucumbers
  • 1 15-oz can chickpeas (rinsed and drained)
  • 1 shallot (minced)
  • 1/2 cup chopped fresh parsley
  • 1/3 cup raisins
  • 1/3 cup roughly chopped pistachios
  • 1/4 cup olive oil
  • Juice and zest of 1 lemon
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions

  1. Chop the bottom of the celery bunch, wash thoroughly, and pat dry. Dice into cubes.
  2. Wash cucumbers, trim ends, slice lengthwise into strips, then cut into smaller pieces.
  3. In a large mixing bowl, add diced celery, cucumber pieces, minced shallot, chickpeas, raisins, chopped parsley, and pistachios.
  4. Drizzle with olive oil and lemon juice/zest. Sprinkle with salt and pepper.
  5. Toss all ingredients well to combine.
