  • 12 cups cubed French bread
  • 3 ripe pears, peeled and diced
  • 5 eggs
  • 2 cups milk
  • ½ cup sugar
  • 2 tsp ground cardamom (divided)
  • ¼ cup orange juice
  • 10 cardamom pods
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • ½ cup heavy whipping cream
  • ¼ cup water
  • zest of 1 orange
  • ½ tsp kosher salt
  • pinch ground cardamom

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix cubed French bread with melted butter, diced pears, brown sugar, and one teaspoon of cardamom until well-coated.
  3. In another bowl, whisk together eggs, milk, heavy cream, sugar, and salt until smooth. Pour this over the bread mixture and gently combine.
  4. Transfer to a greased baking dish and bake for 45–60 minutes or until golden brown on top.
  5. While baking, prepare the cardamom syrup by simmering water, sugar, cardamom pods, orange juice, zest, butter, salt, and ground cardamom until slightly thickened.
  6. Let cool slightly before serving with warm syrup drizzled over slices.
