  • 1 1/2 tbsp vegetable oil
  • 750 g red onions, finely chopped
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp ground allspice
  • 1/2 tsp chilli flakes
  • 250 g light brown sugar
  • 250 mL red apple vinegar
  • 90 mL balsamic vinegar

Instructions

  1. Heat the vegetable oil in a large saucepan over medium-high heat. Add the chopped red onions and sauté for about 10 minutes until softened.
  2. Stir in the salt, black pepper, allspice, and chilli flakes. Cook for an additional two minutes until aromatic.
  3. Mix in the light brown sugar, red apple vinegar, and balsamic vinegar. Bring the mixture to a boil.
  4. Reduce the heat and let it simmer for about 20 minutes until thickened and sticky.
  5. While hot, transfer to sterilised jars and seal tightly. Store for up to six months.
