  • 4 cups apples (peeled and chopped)
  • ½ cup light brown sugar
  • 1 tsp cinnamon
  • 2 cups vanilla wafer crumbs
  • ¼ cup melted butter
  • 1 pkg instant vanilla pudding mix (3.4 ounces)
  • 1 cup milk
  • ⅓ cup salted caramel sauce
  • 1½ cups heavy cream

Instructions

  1. In a medium saucepan, cook the apples with brown sugar and cinnamon over medium heat until soft. Let cool.
  2. Combine the vanilla wafer crumbs and melted butter in a mixing bowl until fully mixed.
  3. Portion the crumb mixture into individual plastic cups and press down to form the crust.
  4. Whisk together pudding mix and milk in a large bowl until smooth; chill for 5 minutes.
  5. Blend in salted caramel sauce using an electric mixer until smooth.
  6. Add heavy cream to the mixture and whip until thick and creamy.
  7. Pipe the mousse into each cup on top of the crust.
  8. Spoon cinnamon apples over the mousse and drizzle with extra caramel if desired.
  9. Seal the cups and chill in the refrigerator for at least an hour before serving.
