  • 5 strips thinly sliced turkey
  • 8 oz farfalle pasta
  • 1 cup cherry tomatoes (halved)
  • 1 cup fresh mozzarella balls (halved)
  • 1/2 cup fresh basil leaves (thinly sliced)
  • 3 tbsp extra virgin olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove (grated)
  • 1/4 tsp red pepper flakes
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F. Arrange turkey slices on a foiled baking sheet and bake for 10-12 minutes until crispy.
  2. Let the turkey cool, then chop into desired sizes.
  3. Boil water in a large pot; cook farfalle according to package instructions. Drain and rinse under cool water.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, grated garlic, red pepper flakes, kosher salt, and black pepper.
  5. In a large bowl, combine cooked pasta with the dressing. Add diced turkey, halved cherry tomatoes, mozzarella balls, and sliced basil. Toss gently to mix.
