  • 1 1/2 cups dry Calrose sushi rice
  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 8 oz imitation crab, chopped
  • 1/2 cup diced English cucumber
  • 1 large avocado, sliced
  • 2 teaspoons sriracha
  • 1/4 cup Japanese mayonnaise
  • Nori sheets (optional)
  • Black sesame seeds (for garnish)

Instructions

  1. Rinse the sushi rice in a mesh sifter until water runs clear.
  2. Cook the rinsed rice with 2 cups of water in a rice cooker.
  3. Once cooked, transfer to a rimmed baking sheet and mix with seasoned rice vinegar. Allow cooling completely.
  4. In a small bowl, combine Japanese mayonnaise and sriracha; set aside.
  5. Chop imitation crab and dice cucumber.
  6. In serving bowls, layer cooled sushi rice topped with imitation crab, cucumber, avocado, spicy mayo, nori (if using), and sesame seeds.
