  • 1 lb boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 12 oz linguine pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the linguine in a large pot of salted boiling water until al dente (9-10 minutes). Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium-high heat, heat olive oil and butter. Add chicken seasoned with Cajun spices and cook until golden brown and cooked through (8-10 minutes). Remove from skillet.
  3. In the same skillet, melt butter, sauté minced garlic, then stir in cream and milk. Add Velveeta cheese until melted.
  4. Stir in mozzarella and Parmesan cheeses, adjusting consistency with reserved pasta water if needed. Toss in drained linguine and serve topped with Cajun chicken.
