  • 1 1/2 pounds peeled butternut squash (about 2 cups, cubed evenly)
  • 2 gala apples (peeled, cored and diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons butter (chopped into sections)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine butternut squash, apples, cinnamon, vanilla, and brown sugar; mix until evenly coated.
  3. Add salt and black pepper; stir again.
  4. Pour mixture into a baking dish and spread evenly.
  5. Distribute chopped butter throughout; cover with a lid and bake for 15 minutes.
  6. After 15 minutes, sprinkle raisins, cranberries, and nuts on top; toss gently.
  7. Cover again and bake for another 15 minutes or until tender and lightly browned.
  8. Remove from oven and serve warm.
