  • 1 1/2 teaspoons baking soda

  • 1 cup buttermilk (or lemon juice mixed with milk)
  • 2 1/4 cups very ripe mashed bananas

  3. In another bowl, cream together sugar and butter until light and fluffy. Add eggs one at a time, mixing well after each addition before stirring in the mashed bananas.
  4. Gradually add the dry ingredients to the wet mixture alternately with buttermilk, starting with the dry ingredients. Mix until just combined.
  5. Pour batter into prepared pans and bake for about 1 hour or until golden brown and a toothpick comes out clean.
