  • 1 large burrata ball
  • 45 ripe plums, halved and pitted
  • ½ cup chopped pistachios
  • 23 sprigs fresh thyme (leaves only)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey (optional)
  • Sea salt and cracked black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place halved plums cut-side up on a lined baking tray. Drizzle with olive oil and honey if desired.
  3. Roast for 20-25 minutes until soft and caramelized.
  4. Let the roasted plums cool slightly before serving.
  5. On a serving plate, place the burrata in the center, spooning the roasted plums around it.
  6. Top with chopped pistachios and thyme leaves, drizzle with more olive oil, and season with salt and pepper.
  7. Serve immediately alongside toasted sourdough or artisan crackers.
