  • ½ cup cooked turkey bacon, crumbled
  • 2 tablespoons unsalted butter
  • ¼ cup shredded white cheddar cheese
  • 6 large eggs
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • Minced scallion (for topping)

Instructions

  1. Preheat your oven to 350°F.
  2. Prick each sweet potato several times with a fork, coat them with canola oil, sprinkle with salt, and bake for 60-90 minutes until fork-tender.
  3. Once baked, slice the potatoes in half lengthwise and scoop out the flesh into a mixing bowl.
  4. Add turkey bacon, butter, and cheese to the sweet potato flesh; mix well.
  5. Fill the hollowed potato skins with the mixture and create a well in the center of each.
  6. Crack an egg into each well and season with salt and pepper.
