  • 2 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 cup apple vinegar
  • 2 cups beef or lamb stock
  • 2 sprigs rosemary
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the ingredients by chopping the onion, carrots, celery, and mincing the garlic.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the lamb shanks until browned on all sides (about 8-10 minutes) and set aside.
  3. In the same pot, sauté the chopped vegetables until softened (about 5 minutes).
  4. Stir in tomato paste and deglaze with apple vinegar, scraping up any browned bits.
  5. Return the lamb shanks to the pot, add stock and rosemary sprigs, bring to a simmer, cover, and braise for about 2-3 hours until tender.
  6. Prepare the roasted garlic puree separately by roasting garlic cloves until soft and blending with olive oil until smooth.
