1 cup uncooked quinoa
2 cups vegetable broth (or water)
2 cans (15 oz each) black beans
1/2 cup sliced green onion
1 cup chopped cilantro
1/4 cup lime juice
1/4 cup olive oil
1 shallot (minced)
1 Tbsp honey
Sea salt and black pepper to taste
Instructions
Cook the quinoa: Combine quinoa and vegetable broth in a medium saucepan. Cook according to package instructions until fluffy. Allow to sit for 5 minutes off heat.
Make the dressing: In a large bowl, whisk together lime juice, olive oil, minced shallot, honey, sea salt, and black pepper until well combined.
Prepare other ingredients: Rinse and drain black beans, chop cilantro, and set aside.
Combine: Fluff cooked quinoa with a fork and add it to the bowl with the dressing. Stir in black beans, cilantro, and green onions until well mixed.
