  • 6 bone-in, skin-on chicken thighs
  • Salt and black pepper to taste
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tbsp butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 cups cooked white rice

Instructions

  1. Season chicken thighs with salt, pepper, paprika, and garlic powder. Dredge lightly in flour.
  2. Heat butter in a large skillet. Sear chicken thighs skin-side down for 4-5 minutes until golden brown; flip and cook for another 4-5 minutes. Remove from skillet.
  3. In the same skillet, sauté onions until translucent; add minced garlic for another 30 seconds.
  4. Stir in flour for the roux; gradually whisk in chicken broth while stirring to avoid lumps.
  5. Add heavy cream and simmer until thickened.
  6. Return chicken to the skillet and cover; simmer on low heat for 25–30 minutes.
  7. Serve over cooked white rice, garnished with fresh parsley.
