  • 3 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • Green onions and sesame seeds for garnish

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add chicken and cook until golden brown (6 to 8 minutes). Remove chicken from the pan.
  3. Sauté minced garlic in the same pan until fragrant (about 30 seconds).
  4. Mix soy sauce, pineapple juice, honey (or brown sugar), and vinegar in the pan; simmer for about 2 minutes.
  5. Combine cornstarch with water until smooth; add to the sauce and simmer until thickened.
  6. Return chicken along with pineapple chunks and diced red bell pepper; cook for an additional 3 to 4 minutes.
  7. Stir in cooked rice until heated through.
  8. Garnish with chopped green onions and sesame seeds before serving.
