  • 250 g caster sugar
  • 1 teaspoon vanilla extract
  • 4 medium eggs
  • 250 g self-raising flour
  • 3 tablespoons milk
  • Zest of 1 orange
  • 200 g icing sugar
  • 2 tablespoons freshly squeezed orange juice
  • 1–2 tablespoons orange zest (for icing)

Instructions

  1. Preheat the oven to 180℃ (160℃ fan) and line an 8×10-inch baking tin with baking paper.
  2. In a mixing bowl, cream together softened butter and caster sugar until light and fluffy. Stir in vanilla extract.
  3. Gradually whisk in the eggs one at a time, followed by self-raising flour and milk until smooth. Finally, fold in the orange zest.
  4. Pour the batter into the prepared tin and spread evenly. Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  5. Allow the cake to cool before icing it with a mixture of icing sugar, fresh orange juice, and additional zest.
