Ingredients

Scale
  • 1 tbsp olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef (80/20 or leaner)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • Salt & pepper, to taste
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef broth (low-sodium preferred)
  • 2 cans (15 oz each) beans (red kidney and black beans)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion for 3–4 minutes until softened.
  2. Add minced garlic and cook for about 30 seconds until fragrant.
  3. Incorporate ground beef into the pot, breaking it apart as it cooks until browned (about 5–7 minutes). Drain excess fat if desired.
  4. Stir in chili powder, cumin, smoked paprika, salt, and pepper; cook for an additional minute to bloom the spices.
  5. Mix in tomato paste followed by diced tomatoes and beef broth; stir well.
  6. Add both types of beans; simmer uncovered for 30–40 minutes while stirring occasionally until thickened.
  7. Adjust seasoning as necessary before serving hot with your favorite toppings.
