  • 2 pounds Yukon Gold potatoes, washed and chopped

  • 3/4 cup half & half or dairy-free milk
  • 1 teaspoon kosher salt
  • 1 cup freshly grated Parmesan cheese
  • Fresh herbs: chives, thyme, sage

Instructions
