  • 4 egg whites
  • 200 grams (1 cup) granulated sugar
  • 1 tsp vanilla extract
  • 360 ml (1.5 cups) heavy whipping cream
  • 110 grams (1 cup) raspberries
  • 125 grams (1 cup) blackberries
  • 135 grams (1 cup) strawberries
  • Splash of lemon juice
  • 12 tsp granulated sugar (optional)

Instructions

  1. Preheat the oven to 220 F (100 C).
  2. In a stand mixer, whip egg whites with lemon juice until frothy.
  3. Gradually add sugar and vanilla while whisking until stiff peaks form.
  4. Shape meringue on parchment-lined baking sheet into an 8-9 inch circle.
  5. Bake for 90 minutes; turn off the oven and let cool inside for at least one hour.
  6. While cooling, wash and prepare berries, mixing them with sugar and lemon juice.
  7. Whip heavy cream until soft peaks form.
  8. Assemble by placing whipped cream in the center of cooled meringue, topping with mixed berries.
