  • 1 tsp turmeric
  • 1 tsp cayenne pepper (optional)
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • Salt and black pepper to taste
  • 1 (13.5 oz) can full-fat coconut milk
  • 1 (6 oz) can tomato paste
  • 1 cup beef broth

Instructions

  1. Prepare ingredients by chopping the onion, garlic, and ginger. Measure out all spices.
  2. In a large pot or Dutch oven, heat oil over medium-high heat. Brown the beef chunks in batches until seared on all sides (5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onions until translucent (3-4 minutes), then stir in garlic and ginger; cook for an additional minute.
  4. Mix in spices: curry powder, cumin, turmeric, cayenne pepper (if using), smoked paprika, and coriander; cook for about 2 minutes.
